Chicken Satay in Peanut Sauce

Serves: Makes 24 appetizers.
Ingredients
  • 1 lb skinless, boneless chicken breasts, cut into 24 cubes
  • 3 tbsp Gluten-free soy sauce
  • 1 1/2 cups Heinz Chili Sauce
  • 1/4 cup peanut butter
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp finely chopped fresh parsley
  • 2 red, green or yellow bell peppers (or a combination) cut into cubes
Instructions
  1. Marinate chicken in 2 tbsp (30 mL) of soy sauce for 15 minutes.
  2. Whisk remaining soy sauce with chili sauce, peanut butter, honey, sesame oil and parsley until smooth. Set aside.
  3. Preheat broiler. Thread one cube each of chicken and bell pepper onto 24 skewers. Place skewers on a lightly greased rimmed baking sheet. Broil on top rack for 3 to 4 minutes per side or until cooked through.
  4. Serve satays on a platter with a bowl containing the reserved sauce for dipping.
